For something different we liked this chicken recipe!
You will need:
2 lb chicken tenders or skinless boneless breasts
2 sleeves of crackers (ritz, townhouse or your fav)
1/4 tsp salt
1/8 tsp pepper
1/2 cup milk
3 cups grated cheddar cheese
1 tsp dried parsley
For the sauce:
1 can cream of chicken sauce
2 tbsp sour cream
2 tbsp butter
Crush crackers. If using breasts cut them into 3 pieces each.
Pour the milk, cheese, and crackers into 3 separate bowls. Add salt and pepper to the crackers and stir well. Dip each piece of chicken into the milk and then the cheese. Push hard and also press the cheese into the chicken. Press the chicken into the crackers and also press it in.
Lay the chicken into a 9 x 13 pan sprayed with cooking spray. Sprinkle the dried parsley over the chicken. Cover the pan with aluminum foil and bake at 400 degrees for 35 minutes. Remove the foil and bake for an additional 10 – 15 minutes or until the edges are golden brown and crispy.
In a medium sized sauce pan combine the cream of chicken soup, sour cream, and butter. Stir over medium high heat until hot and well mixed. Pour over chicken and serve.

We found this to be calling out for something else. Next time we will spice it up a bit with maybe some hot sauce, garlic, or even Old Bay.
