We sure love asparagus. When it is in season we have it a lot! When out of season, not so much. It was on sale in Food Lion, but we didn’t like the way it looked. A little dry. The produce man was there and saw me pick it up and put it back down. I saw him watching me and said that it looked a little dry, and did he have anymore in the back. He said yes, and that he would get us some. He evidently picked through it because he came out with a much better looking bunch! We thanked him and put it in the cart.

You will need:

1 bunch fresh asparagus
3 tbsp butter
garlic powder
onion powder
pepper
1 tbsp grated parmesan cheese
3/4 cup shredded mozzarella cheese

Line your baking sheet with aluminum foil. Put the asparagus on the sheet and drizzle with the melted butter. Sprinkle the garlic powder, onion powder, pepper and the parmesan cheese over the top. Put it in a 400 degree oven for approximately 15 minutes. Slide the oven tray out and sprinkle with the mozzarella cheese. Put back in and cook for an additional 5 – 7 minutes to melt the cheese and let it start to brown. Enjoy!
