We love this lasagna! It makes a lot and Margo usually only makes it when we have company. But this time we had it twice and she froze the rest!
You will need:
1/2 lb lasagna noodles
2 Tbsp oil
2 cloves mince garlic
1 medium onion, chopped
1 lb ground beef
2 1/2 tsp salt
1/4 cup parmesan cheese
1 Tbsp minced parsley
2 6 oz cans tomato paste
1 1/2 cups hot water
2 eggs, beaten
1 pt cottage cheese
1/2 lb mozzarella cheese (sliced or shredded)
oregano to taste
Bring a large pan of water to boil. add noodles and let cook for 15 minutes. Drain.
Heat oil in pan. Gook garlic and oil until soft. Add beef, salt, parmesan cheese, and parsley and cook until crumbly. Add tomato paste and hot water. Stir and cover with lid. Simmer for 5 minutes and set aside.
Beat eggs and stir with cottage cheese in a bowl.
To assemble: Use a 9 x 13 x 2 inch baking dish. Put a thin layer of meat sauce, half of noodles, all of cottage cheese mixture, and half of the mozzarella cheese. Repeat with half of remaining meat sauce, rest of noodles, remainder of meat sauce, and mozzarella cheese.
Top with parmesan cheese and sprinkle oregano to taste. Bake for 30 minutes at 350 degrees. Cool 10 minutes. Serve and enjoy!
