Our slow cooker died and we had to replace it. After we both did research, we both came up with the same solution: Instant Pot! So far we are loving it.
We already had some things to try before it arrived. My first was pulled pork. I like it in the Big Easy SRG, but it is a little too cold outside for me. So we bought a big butt and cut it in half. First try was tonight. Turned out fantastic!
You will need for the coating:
2 tbs paprika
1 tbs light brown sugar
2 tsp garlic powder
1 tsp fresh ground pepper
1 tsp ground mustard
1 tsp kosher salt
Mix these ingredients and coat the butt. Should be cut into easy to handle pieces first. Place in refrigerator for 30 minutes or up to overnight.
Put some olive oil in the Instant Pot and turn on saute. When hot place pork in and let brown for about 3 minutes per side. Remove and place on plate. May take more than one session.
Add 1 cup of BBQ sauce and 1/2 cup chicken stock or water to pot. (Save some to pour over the meat)
Close lid and place vent on seal. Cook for 75 minutes. Will take about 5 minutes to seal before timer starts. Allow to slow release when time is up. Will take over 20 minutes.
Remove pork and shred.
