We love lobster, but hate the mess at the table of cleaning them. Normally when we have whole lobsters I clean them after cooking and put only the meat on the plate. I know, not much for presentation, but we are into convenience!
So today, for Valentines Day, we had lobster, asparagus, and rice. I cooked the lobster and Margo cooked the asparagus and rice.
For this you will need:
4 small or 2 large lobster tails
6 tbsp butter
1 good squeeze of a fresh lemon
2 tbsp finely chopped parsley
1/3 of a small onion finely chopped
In a skillet melt the butter with the onions. Squeeze the lemon over the mixture. Add the parsley. Let this mixture simmer for a while until the onions are soft. While this is simmering, cut the lobster tails into bite sized pieces.
Add the lobster meat and cook until it is all white. 5 to 8 minutes should be plenty. Do not overcook or the lobster will be tough.

Margo was not as excited about the onions as I was. So maybe I will try garlic and maybe a very small amount of very finely cut onions.
