One of the best things about being married is being introduced to new foods. I had never tried dumplings, but Margo made them and I like them! Now we eat them regularly.
You will need:
2 cups flour
2 tsps baking powder
1/4 tsp salt
3 tbs shortening
1/2 cup chicken broth
The broth is made by boiling a chicken carcass for about 45 minutes. Remove the carcass. You may used some of the meat that comes off in the dumplings.
In a large bowl combine the flour, baking powder, and salt. Cut in the shortening with a pastry blender until the mixture forms fine crumbs. Stir in enough hot broth to make a firm, but manageable dough.
Bring the broth to a boil. Roll dough to 1/16 inch thickness and cut into 2 inch squares. Drop the squares one at a time into the boiling broth. Bring the broth to a boil again. Then reduce heat to medium and cook dumplings until tender. About 15 minutes. Serve with chicken.
