Fall is here once again and we are thinking of soups and stews! This Spinach Soup is awesome.
You will need:
10 ounces frozen chopped spinach
1/2 cup chopped onion
1/4 cup butter
1/4 cup all purpose flour
2 cups milk
1 cup water
1/2 tsp kosher salt
1/4 tsp ground nutmeg
16 ounces Velveeta
Place drained and thawed spinach in the slow cooker. Add the chopped onion. In a sauce pan, whisk the melted butter and flour to make a roux. Slowly add the milk and water. Add salt and nutmeg. Pour this mixture into the slow cooker.
Add Velveeta. Cover and cook on low for 5 – 6 hours, or until the onions are translucent.
